For spaghetti all’amatriciana, cut the bacon into small strips and dice the onions. Finely chop the garlic. Remove the tomatoes from the juice and cut them into pieces.

If you like it hot: cut the peppers in half, carefully remove the seeds and cut the pods very small. Otherwise, omit the peppers.

Fry the bacon in a pan, add the onion and pepperoni and saute. Mix in the tomato paste and stir in the garlic. Now add the chopped tomatoes and cook for about half an hour over medium heat without a lid.

Add the juice of the tomatoes and season with salt, pepper and oregano. If you didn’t use pepperoni, you can now season it a bit with chili flakes.

Cook the pasta and mix with the sauce. Grate the cheese over it and serve the spaghetti all’amatriciana.
