For the scallops on skewers, mix the lime juice and zest, curry powder, salt and pepper with the olive oil to make a marinade. Place the scallops in the marinade and leave to marinate for a good hour.

Meanwhile, remove the skin, seeds and stem from the bell pepper and cut into squares.

Thread the scallops and the bell pepper pieces alternately onto the wooden skewers. Place on the hot grill and grill each side for about 6 minutes.
