For the flash pizza from the Thermomix, preheat the oven to 230 °C, line a baking tray with baking paper. Cut the Gouda and Parmesan into 2 cm pieces. Place the pieces in the mixing bowl and chop for 10 seconds / speed 5. Transfer the chopped cheese to a bowl and set aside for sprinkling.

Add the yeast to the mixing bowl with 5 g sugar, 1 tsp salt and 150 g warm water and dissolve for 10 seconds / speed 3. Weigh in the flour and oil and knead everything for 2 minutes / dough speed. Form the dough into a ball on the well-floured work surface with your hands and roll out to the size of the baking tray. Place the dough on the baking sheet. Clean mixing bowl and mixing knife.

Add the tomatoes, tomato paste, oregano, 1 tsp salt and remaining sugar to the mixing bowl and mix for 10 seconds / speed 3. Spread the sauce over the base and sprinkle with the cheese.
