A more wonderful asparagus recipe:
1. rinse and peel the potatoes. Pre-cook in salted water with a little bit of sugar for about 15 min. and cool.
2. peel asparagus, cook for about 12 minutes. If you take green asparagus, peel only the lower third and do 8 min. Lightly roast almond kernels without fat
3. roughly grate potatoes. Roast in portions in hot oil in a coated frying pan to small Rösti (about 8 cm Ø)
4. place asparagus on a baking tray covered with foil. Sprinkle with butter flakes and Parmesan and bake under the broiler until golden brown
5. top each hash brown with 1 slice of smoked salmon. Serve with asparagus spears. Sprinkle almond kernels on top. Garnish with dill
