Preheat the electric stove to 250 degrees. Moisten salt with egg white and a few drops of water and place half of it on an oiled baking tray.
Rinse trout, dry, season inside and out with pepper. Chopped garlic and parsley sprigs in the center form. Place the fish in the salt, pressing the remaining salt firmly all around until smooth. It should evenly cover the fish everywhere. Bake in the oven for 20 min., then add more salt for 10 min.
Break the salt crust, remove the fish skin and arrange the fillets on warm plates.
Serve with: boiled peeled potatoes cooked with rosemary.
